Prior to this Theo spent ten years working as head chef and, later, partner at the River Cafe in London where he worked alongside Rose Gray and Ruth Rogers. As one of the Italian experts working with Ask Italian he is helping to create an authentic and seasonal Italian menu. Carla Capalbo is a renowned food, wine and travel writer with numerous publications to her credit. She has spent 20 years of her life living in Italy.
